Stephane Foray, the executive chef of Le Bistrot de l’Echanson joined Hotel Mercure Ginza after 10 years with the Dutch embassy in Tokyo.
As the personal chef of the ambassador he had the opportunity to cook for Japanese and Dutch politicians as well as business leaders.
Stephane gained his experience in various starred restaurants including the famous luxury Hotel du Crillon-Athenee in Paris.
After arriving in Japan, he first worked in hotel Nikko, and then joined the kitchen of a restaurant located at the foot of Himeji-Kansai Mountain. This experience allowed him to discover the wealth and the beauty of natural Japanese products.
Today, his cuisine is seasonal, based on fresh, wild and local products like flowers and plants. He likes to play with flavours, texture and colors to offer a refined French Cuisine with Japanese inspiration
